I think, for the most part, they set it up like that because most of the time people only want one cap (for the beginning of a sentence or somebody's name). <br /><br />Some of my fav hints are - <br /><br />1. If you hit the SPACE twice quickly, you get a fullstop. <br /><br />2. If you're typing a sentence and want to use a number or a symbol (eg, : or $ or something like that), you can press and HOLD the [.?123] key, slide to the symbol you want, then release your finger and it goes back to the alphabet keyboard.<br /><br />2.5 You'll also notice while using the keyboard, that if you hold down certain characters for a second (like the " and ' keys) that options pop up for "hidden" characters like "proper" curly quotation marks.<br /><br />3. The calculator. You'll notice it doesn't have the percentage key (among others) UNLESS you turn the iphone on it's side (while using the calculator application), whereupon it becomes a scientific calculator with said percent key and some other scientific functions.<br /><br />4. You probably already know this, but I'll stick it here anyway - if you press and hold on a desktop icon, they all go "wobbly" and you can rearrange the icons how you want (or delete an application by pressing the 'X's that appear on the icons).
